Nishin Sushi
Nishin-sushi, a type of nare-zushi, is a preserved food made with herring from Ezo, a major trading product of the Kitamae-bune, and a specialty of Tsuruga, a port town that once flourished as a port of call for the Kitamae-bune. Salted daikon radish and herring soaked in water to soften them are marinated with malted rice and seasonings, and allowed to mature for a while to enhance their flavor.
