Grilled Mackerel
In Wakasa, once a "miketsukuni" (land of food) where people were allowed to offer food to the emperor, a lot of high-quality fish were landed. The mackerel, which was landed in large numbers and gave rise to the "Saba Kaido" (mackerel road) leading to Kyoto, is skewered on bamboo sticks and grilled whole, which is called "Hamayaki Saba" (grilled mackerel on the beach). In the Reinan region, mackerel is usually served with ginger soy sauce.
