A fish that heralds the arrival of spring, this annual member of the goby family is known by its Japanese name "shiro-o" (white croaker). It is caught by bag net fishing with scaffolding in the lower reaches of the Minamigawa River that flows through Obama City.

We make sushi using fresh fish caught in Wakasa Bay. We are especially proud of our grilled mackerel sushi, mackerel sushi, and small sea bream sparrow sushi, and we also put a lot of effort into our nigiri. Our sushi rice is made with "Koshihikari" rice produced in Fukui Prefecture and "rice vinegar" from a local tobacconist. We hope you will try our sushi.
