Yellowtail swimming in the rough seas of the Sea of Japan have a firm and fatty flesh, and the cold yellowtail caught in winter is especially delicious. In Mihama Town, the excellent fish weighing 8 kg or more that are caught in the Hyuga area between late November and January and properly processed, including the removal of blood, are branded as "Hirugahibiki.
