Mackerel
In the olden days, mackerel often caught in Wakasa Bay was salted and then delivered to the capital of Kyoto via the "saba kaido" (mackerel road), which has a long history of supporting the culinary culture of the area. It is often eaten locally, and there are numerous local dishes made from mackerel, such as grilled whole mackerel, heshiko, and grilled mackerel sushi.
