As the Chinese character for "Spanish mackerel" (鰆) indicates, it is said to be a fish that heralds spring. In recent years, however, it is caught year-round, and Fukui Prefecture's catch is one of the highest in Japan. It has a moderately fatty, elegant, and delicious flavor, and fresh fish is excellent as sashimi.
