Local cuisine of Tsuruga and Wakasa Heshiko

In Wakasa, which was once a "miketsukuni" (land of food) where people were allowed to offer food to the emperor, a large amount of high-quality fish was landed in abundance. To preserve the fish for a long time, the entrails were removed and pickled in salt. It is said that heshiko got its name from the word "heshikomu," which means to put a weight on the fish to marinate it, and mackerel is commonly used.
